Polenta/Cranberry Cookies
We had a work cookie exchange yesterday and I just got the recipe for one of the tastiest cookies EVER:
Polenta/Cranberry Cookies
350 degees for 16-18 mins. (check: some say 10-12 in their oven)
3 cups flour
1 cup yellow corn meal
2 tsp. baking powder
1/2 tsp. salt
3 sticks butter, soft
1 1/2 cups sugar
2 large eggs
2 tsp. vanilla
2 cups cranberries
Mix dry ingredients; cream butter & sugar; add eggs; add flowr mix and vanilla; stir in cranberries. Drop 2" apart on greased pan.
